One of our course attendees' absolute favourites - always goes down a storm. Perfect as an aperitif or as a creme de cassis replacement in a glass of wine or bubbly.Ingredients:-
1 litre vodka (good quality vodka is preferable because the flavour will come through the raspberry taste)
470g raspberries
240g sugar (caster preferably)
Place the raspberries, sugar and vodka into a large screw top jar.
Shake to start dissolving the sugar and place into a dark cupboard.
Shake every day for 3-4 days or until the sugar as dissolved and then leave in the cupboard for at least 3 months.
Decant through a muslin lined sieve into a jug. Pour into a screw top bottle and leave in a dark place for at least 3 months (the longer the better as the flavour deepens and develops over time.
Pop the vodka soaked raspberries into a berry boozy trifle.
